PORCELLUS ASSUS

Ingredients:

-         A piglet

-         hard-boiled egg yolks

-         Garum

-         Wine

-         Pepper, rue, savory and onion

Chop the spices: pepper, rue, savory and onion. Mince the egg yolk, adding wine, olive oil and salt. Mix everything together and bring it to boil. When it is cooked add this sauce to the piglet and cook everything in the oven.

 

 PATINA COTIDIANA

Ingredients

-         Lasagne

-         Meat, chicken, fish

-         Bouillon

-         Egg yolks

-         Starch

-         Marsala wine

-         Wine

-         Celery and Parsley

-         Garum

Add the Marsala, the wine, the pepper, the bouillon and the gaurum. Then mix it with the meat, the chicken and the fish and bring it to boil. Add the egg yolks and the starch. Arrange in layers the lasagne pastry in a baking pan with the mix you have prepared.
